As you can tell I am not excited by the retirement. I'm handling it with "quite grace and dignity." Some days I don't even get out of my pajamas. But, the days I do get dressed, I try to find something to make my husband for his lunch. Miles returned to teaching English, along with a million children in the United States returning to classes. Everyone has to eat. School may not be that stimulating but at least for 30 minutes out of the day you can enjoy something delicious.
I grew up eating pimento cheese sandwiches, especially with tomato soup. Mom would also cut celery stalks into 3-inch sticks and fill them with pimento cheese. She would buy Price's, but a few years ago I decided to learn to make it. How hard could it be? It isn't. It's very simple with simple ingredients.
Try this and tell me if you agree in how easy it is to make and how delicious it tastes. I'll be lazing around the house waiting to hear!
Pimento Cheese Spread
1/2 pkg Cream Cheese, softened
1/3 C Mayo
2 C Cheddar Cheese, shredded
1/2 C Pimientos, chopped and drained
Dash of garlic powder
In a medium bowl beat cream cheese and mayo with a wire whisk until smooth. Stir in remaining ingredients until blended. Chill until ready to serve.-Makes 2 cups. -10 minutes.
If you want it spicy, you could add diced jalapenos, or sprinkle with Hot Salt or jalapeno seasoning. You could add chopped olives, black or green. Make it the way you like it, but start out plain and see what you like first.
