Mistress of the Universe


It doesn't take much to make me feel like a demi-god. A day when hair, make-up, and clothes look like a transformation by a magician. Finishing a good book and being inspired to work on one of the novels I've started. And a compliment from Miles about a meal I made for him.

I finally did it. I didn't buy Popeye's biscuits, but I made some from a Martha White's package mix. 

All I had to do was add milk and drop by spoonfuls on a cookie sheet. Plus these were cheese biscuits. I think it makes about 6 biscuits.


I was going to make the breakfast on a biscuit with a poached egg, but while the bacon was cooking in the microwave I had the idea to do a fold over. I broke one egg in a bowl and beat it lightly. After pouring it in a hot skillet, I lightly scrambled it. Then I let it kind of sit there, like you do when making an omelet. I am not an omelet official; that's my dad. He makes the best in the universe. Once the edges start getting done, I flipped one side(does a round shape actually have an edge? I think not, but how else does a normal person describe this?) toward the middle. I flipped the opposite side toward the middle. It looked like a burrito with both ends open. I flipped one open end toward the middle, and then  the other open end toward the middle. The circle of egg now looked like a square on the outside, with the round edges meeting in the middle. I took the whole square and flipped it over, to make sure the inside of the square got cooked.

I cut a cooked biscuit(it only took 10 minutes to cook) in half. I layered the bacon, in the criss-cross fashion patented by my husband, on the bottom half. I laid the square of eggs on top and put the top of the biscuit on. I wrapped the biscuit in a paper towel and then foil. 


The other day we watched The Avengers 3D and I feel a little like the Russian chick in the movie. But she didn't have as many cool powers as the guys did. I think I have better ones. I have the power to make my man a tailored meal. Well... it's a start.
